Description
Bobal Red Wine – D.O. Utiel-Requena
A red Bobal wine crafted by winemaker Pepe Hidalgo, made from a selection of Bobal grapes grown on vines over 40 years old in the high vineyards of Utiel-Requena, yielding no more than 1 kg of fruit per plant for greater concentration and quality.
Harvested in mid-October at optimal ripeness, the grapes undergo a 4-day cold pre-fermentative maceration at 3°C, then ferment at 26°C with 10 days of skin contact for colour and structure. Half of the wine completes malolactic fermentation in French oak, followed by 12 months’ ageing in lightly toasted French oak barrels.
Tasting note
Intense red with a violet rim and dense tears. Aromas of broom, red fruit and English toffee with light smoky hints. Bold and full on the palate, with a warm oak finish.
Pairing
Rice dishes, red meats, stews, pasta.
