Red Wine D.O. Utiel – Requena
A red Bobal wine from Utiel-Requena, crafted by our winemaker, Pepe Hidalgo, who has given a unique and exclusive personality to this black Bobal. The process has been meticulously cared for at every stage.
This red Bobal wine is made from the finest selection of Bobal grapes from the high vineyards of this region. The vines are over 40 years old, with a yield of no more than 1 kg per plant. This is the reason for the excellence of these grapes—fewer clusters per vine to ensure better quality fruit. This guarantees unique and intense properties in both the typical Bobal aromas and in color and body.
Secondly, after harvesting in mid-October, right at its optimal ripeness, a prefermentative maceration is carried out for 4 days at a very low temperature (3ºC). This enhances the aromatic contribution. Subsequently, fermentation occurs at 26ºC, remaining in contact with the skins for 10 days to achieve great color intensity and a higher contribution of polyphenols, which Bobal is known for.
To complete and give a wide range of nuances, 50% of this wine undergoes malolactic fermentation in French oak barrels, followed by a 12-month aging period in lightly toasted French oak barrels.
