Description
Bobal White Wine – D.O. Utiel-Requena
An unusual white wine made entirely from red Bobal grapes. Except for Garnacha Tintorera, all red grape varieties have white pulp — colour comes only from skin contact during maceration. By minimising that contact, a clean white wine can be pressed from a red grape, though Bobal’s deeply pigmented skin makes this especially difficult to achieve well.
Yields are kept low for quality, and grapes are hand-harvested and transported in boxes of no more than 10 kg to arrive at the winery in perfect condition. After gentle destemming and whole-grape pressing (a yield of just 45%, meaning almost 2 kg of grapes per bottle), the clear must rests cold on its lees for 3 days to refine its nuances and settle out any colour impurities. It then undergoes controlled fermentation at 14°C, finishing in oak barrels.
Tasting note
Yellow with grey and reddish hues. Aromas of wild strawberries, white flowers and ripe white fruit. Integrated acidity on the palate, refreshing, with a long finish reminiscent of forest fruits.
Pairing
Seafood, fish, cheeses.
