**Vicente Gandia Bobal Blanco**
A white wine from Bobal grapes, D.O. Utiel-Requena, with its own unique and exclusive personality. It has been crafted with meticulous care at every stage of production.
You might be surprised to see a white wine made from Bobal grapes, but the truth is that, except for Garnacha Tintorera, all red grape varieties have white pulp. The color of red wine comes from the skins and the maceration of the must with them. Therefore, if the contact of the must with the skins is minimized, excellent white wines can be produced.
At first glance, it seems simple, but we must note that Bobal has a significant coloring potential in its skin, making it challenging to achieve a clean and clear white wine. However, we can proudly say that we have succeeded!
The entire process has been carefully controlled to achieve an unprecedented result, starting with reducing the yield per vine to obtain higher quality grapes. This is followed by hand harvesting and transporting the grapes in boxes of no more than 10 kg, ensuring that the grapes arrive in perfect condition at our winery. We continue with a very gentle destemming and whole grape pressing.
A light pressing extracts a clear must, which is the base of our Bobal Blanco. To give you an idea, the pressing yield we worked with is 45%, meaning we need almost 2 kg of Bobal grapes to produce one bottle of Vicente Gandia Bobal Blanco.
The resulting clean must is kept cold with its lees for 3 days. This enhances its nuances and absorbs color impurities. After this process, it is transferred to a clean tank to begin controlled fermentation at 14ºC. It is then finished fermenting in American oak barrels.
